Lately while traveling a lot I’ve been obsessed with Protein Bars.
Especially with Vegan Protein Peanut Butter Bars or Chocolate ones. (see my chocolate bar here)
Unfortunately most of them include artifical sweeteners and low quality of protein etc.
That’s why I decided to make my own bars.
I took care that this bar includes only the best ingredients for you,
is low carb and also not to high in fat.
So as the name says… A PROTEIN bar π
The great thing is it is also a no-bake recipe!!!
So extra quick and you will always have something sweet & healthy at home. π
You can make this recipe with or without a chocolate coating.

Vegan Protein Peanut Butter Protein Bars:
Yield: 6 bars Prepare time: 15 min. Cooling down: 1 hour Total time: 1 hour 15 min.
Ingredients:
- 90 gram protein powder β I used pure rice protein, you can also use soja, pea, oat, almond or any powder you like
- 80 gram grounded almonds
- 60 gram peanut butter (without sugar and palmoil) β Also Almond butter is great!
- 60 gram rice syrup β also honey, agave syrup, maple syrup or dates work
- 2 tbsp coconut oil β for a great texture
- 4 tbsp non-dairy milk β I used soja. You can also use oat, almond, rice, etc.
Optional top coating:
- 50 gram dark chocolate (80% or 90% chocolate)
- 1 tsp coconut oil
Instructions:
- Line a bread form with parchment paper, leaving overhang on all sides so you can remove it easily.
- Put the protein powder, almonds, peanut butter, rise syrup, coconut oil and soja milk into a bowl and knead it well together with your hands. It should be a firm mass that sticks well together but is also not too moist (for more details watch my protein bar video on YT)
- Put the whole dough into the bread form and press it well in. The height of the bars should be around 1 cm. Put it in the fridge β or if you need it quicker the freezer.
- Lift the bars from the form using the parchment handles and transfer to a cutting board. Slice into bars of desired size. I made 6 bars out of this dough.
- Optional. After that, melt the chocolate with the coconut oil in a water bath. Then sprinkle the chocolate over the bars and either cover them totally or just in stripes.

If the bar dough is too dry, you can add more milk or peanut butter.
The nutritional information will vary based upon the brand of protein powder you use. If you’d like to calc them with a specific brand, you can do so for free at myfitnesspal.com.
Store the bars in the fridge for up to 1 week or freeze for up to 3 months. I like to wrap mine individually, then remove them from the freezer as needed.
