My favorite winter dish – chicken and sweet potato tray.
When it comes to cooking during the week I love it to be healthy, simple and quick.
This dish is perfect for you if you are looking for a dish to be easily prepared and healthy as well.
My chicken and sweet potato tray is so easy and you only need few ingredients.
Ingredients for 2 people:
600 g chicken thighs
Basic dressing for the chicken
Paprika powder
1 pinch of Salt each thigh
Olive oil
(optional you can add a bit of soy sauce and 1 tsp of honey)
Sweet potato
Olive oil and salt
The basic recipe is very simple, of course you can add other herbs and flavors as well.
Let’s start with my chicken and sweet potato tray recipe.
Preheat the oven to 200°Celsius / 392°F
Put paprika powder, pinch of salt and olive oil on the chicken thighs and massage the marinade in until each thigh is covered.
Then put them on a baking tray with baking paper.
Cut the sweet potatoes into 1 cm to 1cm thick sticks and put them next to the chicken.
Put a bit of olive oil and salt over the sweet potatoes or any other herbs you like.
Once the oven is hot, put the whole baking tray in and leave it there for about 45 minutes (depending on the thickness of the chicken thighs).
Once they are crispy you can release them…. into your mouth 😉
I love a tomato salad on the side to this dish.
And instead of tomato ketchup I use tomato paste (which is only tomato).
That is a healthy dish which is really satisfying and once in the oven done by itself.
